If you kids are anything like E, mealtime is like trying to get a cat in a bathtub! She's picky, she's tired, I'm tired, and we are all hungry! But this is one meal that takes 40 minutes tops and appeased my very picky (does not eat chicken) eater.
Ingredients:
1 lb chicken breast cut thinly
1/4 tsp salt
1/2 tsp garlic powder
1 tsp Italian seasoning
1/2 cup shredded mozzarella cheese
1/4 - 1/2 cup marinara or pizza sauce
10-12 pepperonis (I use turkey pepperoni)
salt and pepper to taste
Method:
Pre-heat oven to 375 degrees
Mix together seasonings, cheese and 1/4 marinara in small bowl
Season chicken breasts with salt and pepper & lay flat on foil-covered sheet pan
Spoon a small amount of stuffing onto each breast, making sure its a thin layer.
Top with 2-3 pepperoni
Roll the stuffed breast and place seam side down. Cover the outside of the chicken with marinara and top with 1-2 pepperonis. Sprinkle it with extra cheese if desired.
Bake for 30-35 minutes or until chicken is cooked through.
I serve it as-is with no sides, but feel free to add with a side of veggies or a salad.
