Easy weeknight meal: Pizza Chicken

If you kids are anything like E, mealtime is like trying to get a cat in a bathtub! She's picky, she's tired, I'm tired, and we are all hungry! But this is one meal that takes 40 minutes tops and appeased my very picky (does not eat chicken) eater.

  • 1 lb chicken breast cut thinly

  • 1/4 tsp salt

  • 1/2 tsp garlic powder

  • 1 tsp Italian seasoning

  • 1/2 cup shredded mozzarella cheese

  • 1/4 - 1/2 cup marinara or pizza sauce

  • 10-12 pepperonis (I use turkey pepperoni)

  • salt and pepper to taste

  1. Pre-heat oven to 375 degrees

  2. Mix together seasonings, cheese and 1/4 marinara in small bowl

  3. Season chicken breasts with salt and pepper & lay flat on foil-covered sheet pan

  4. Spoon a small amount of stuffing onto each breast, making sure its a thin layer.

  5. Top with 2-3 pepperoni

  6. Roll the stuffed breast and place seam side down. Cover the outside of the chicken with marinara and top with 1-2 pepperonis. Sprinkle it with extra cheese if desired.

  7. Bake for 30-35 minutes or until chicken is cooked through.

I serve it as-is with no sides, but feel free to add with a side of veggies or a salad.
